summer supper…

One of my favorite online magazines is Sweet Paul‘s new e-zine, where I came across this fabulous recipe for Papaya & Citrus Salad with Maple Syrup Dressing. Who cares if it’s only Tuesday, I think I’ll be scooting down to the produce market for tonight’s dinner! Don’t you just love summer when you can get gorgeous “naturally-grown” produce straight from the fields?!

I think this salad would go perfectly with my Dill Baked Salmon. Here’s my own recipe (quantities are guesstimates…don’t hate me if you hate it).

Serves 4 – 6

4 Wild Salmon Filets

4 tbs real mayonnaise

4 tsp fresh chopped dill (or 2 tsp dried)

1 tsp Kosher or Rock salt

1 tsp Pepper

Pat the salmon filets dry with paper towel and place on a tinfoil-lined baking sheet (use a large enough piece of foil to fold over the filets). Spread 1 tbs of mayo over the top of each filet and sprinkle with 1 tsp chopped dill (or 1/2 tsp dried). Sprinkle with Kosher salt & pepper to taste. Fold the tinfoild over the salmon and pinch to seal.

This is where my recipe gets a little fishy (get it). Bake at 350 for 30 minutes (or less or more, depending on size of filets). Do not overcook the salmon, unless you’re like my girlfriend, Samantha, who loves dry, dry, dry baked salmon (mental note: need to look for new friends with better taste!).

This is where I take a big gulp of chilled Reisling…twirl my pearl necklace…and wish you all a Bon Appetit!

Quinoa salad days…

Who knew a little “seed” could taste so darned good? As promised in my Twitter posts, I snagged a recipe for Quinoa (pronounced KeenWa) Salad from my girlfriend, Marlene, who brought it to a BBQ we hosted a couple of weeks ago. It was delish and I think you’re going to enjoy it. Sorry I don’t have a picture of the salad, but here’s a picture of Marlene to feast your eyes on as you make the salad:

QUINOA SALAD

1 c. quinoa
2 c. water
2 T. olive oil
8 T. fresh lime juice
2 tsp. (or more) ground cumin
2 tsp. (or more) ground coriander
2 T. (for sure more) fresh minced cilantro
4 T. (or more) minced green onions
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) garbanzo beans, rinsed and drained
2-3 c. diced tomatoes
2 c. diced peppers, variety of colours
1 T. minced jalapeno pepper
salt and pepper to taste

1.    Cook the quinoa as per package directions.  Cool.
2.    In a measuring cup, combine the oil, lime juice, cumin and coriander.
3.    Lightly mix the quinoa with the green onions, cilantro, beans, tomatoes, and peppers.
4.    Pour the dressing over the salad and mix lightly.
5.    Season with salt and pepper.  Alternately, you can season the dressing with salt and pepper.
6.    Serve cold.
7.    I don’t measure the vegetables… I just add the amounts that ‘look good’.

Rest assured, that while you’re eating your salad, you’re doing your body a big favor. The Quinoa is an excellent source of protein and fiber, and it’s rich in phosphorus, magnesium and iron too. Oh, it’s also gluten free and easy to digest.

Whoa. That’s one macho seed!!!

Marlene graciously agreed to share her recipe for pickled cucumber salad too! If you love bread and butter pickles, you’re gonna love this salad. It’s an excellent side dish for meet and fish.

CUCUMBER SALAD

4 Japanese cucumbers, thinly sliced
1 sweet white onion, thinly sliced
1 c. white vinegar
½ c. water
¾ c. white sugar
fresh chopped dill

1.    Toss together the cucumber and onions in a large bowl.
2.    Combine the vinegar, water and sugar in a saucepan and over medium-high heat, bring to a boil.
3.    Pour over the cucumber and onions.
4.    Stir in the dill, cover and refrigerate until cold.

Marlene is of Russian decent and she promised to teach me how to make some divinely decadent Russian plum tarts in the Fall when the plums are ripe. Can’t wait!!!!

dreams of faraway places…

I’ve been really fortunate to meet some special people through my business, and Katharine Harringer (@agirlinmadrid for all you Twitter followers) is one of them. I first met her as a customer, who was on her way to a new life in Madrid, and we quickly became long-distance friends. She’s a talented photographer/stylist/epicurean and I am enjoying her daily musings about her food passion and life in Europe on her blog called A Girl In Madrid. She has been in town visiting family and we had a chance to meet for tea and scones and delightful tales of her adventures. Such a classy girl–she even brought me a beautiful bouquest of hydrangeas and some delectable olive butter from  Spain! Lucky me.

Weight Watchers, donuts, the Eagles, Le Crueset…

What do they all have in common? ME! This is just so typical of me that it’s ridiculous. Last week I joined Weight Watchers ‘CAUSE IT’S TIME, BABY!!! I guess I figured the 15th time around is the lucky one!

So I pay my dues, read the literature, drink a glass of wine and promptly decide to make homemade donuts. (“But my blog followers are depending on me to make donuts, Mark!”)

Due to my poorly conceived plan, the universe promptly paid me back by planting a virus in my boyfriend, Timothy B. Schmidt, of the Eagles, and their concert was canceled.

That’s right…I had tickets to that concert! Now where am I going to wear my new sequined tube top? How am I going to hook up with Tim, now? His tour keeps him really busy, so we never get to see each other! (Yeah…sure…that’s me with a blonde wig…now you can see why I need WW’s)

Oh…don’t cry for me my friends. It didn’t take long to compensate. I promptly justified spending the ticket money on a ridiculously expensive Le Crueset Dutch oven. Hey…if you’re frying donuts and getting over a man, you have to have a fancy shmancy pot!

Yeah, yeah…I know…I’m married to a saint! But just so ya know, I did make it clear to Mark–a long time ago–that if Timothy, or Sting, for that matter, comes to the door looking for me, I’m outta here! He seems oddly okay with that.

So I went to The Pioneer Woman and followed Ree Drummond’s recipe–Homemade Glazed Doughnuts–with a fine-toothed comb. I’ve gotta say, there is something just so satisfying about dropping rings of dough into hot oil–what’s that all about? For my first attempt at donuts, they weren’t too bad, but I would add more sugar and salt to the batter next time.

My extended family gathered at our house for a BBQ (my shattered sister flew down to Vancouver just to see said Eagles) just in time to smell the divine scent of freshly glazed donuts! And yes, my son’s possee of longboarding punks did show up to shovel down some donuts.

Hey, Timothy. When we’re hungry, donuts–not love–will keep us alive. Check your call display and hit reply!

yoohoo…doughnuts…

My lucky family is going to be devouring some homemade doughnuts this weekend! I was just snooping around one of my FAVORITE blogs, The Pioneer Woman, and I came across a lesson on making doughnuts. Ree, the pioneer woman herself, photographed each step in the process, and makes it look so easy. So I’m going to make a big batch this weekend and see just how easy it is.

I’m always thinking of ways to keep my kids coming through the back door with all their friends, and I think this might just do the trick. Hey…I’m not above using trickery. As any clever mother will tell you, it’s a war out there, and we have to use all our powers to stay one step ahead of our little punks…er…adorable children.

buffet from above…

I’m not a big fan of circus entertainment, but this hanging buffet inspired by Cirque De Soleil is fantastic! It’s featured in Nesting Newbies magazine, and befitting of a swanky fete!

The concept was developed by caterers, La Bonne Cuisine Fine French Catering, in San Francisco. They drew inspiration from Cirque De Soleil and events in France where surprise “food stations” descend from the ceiling. Why don’t I ever get invited to events with magical food appearing from the heavens?!

blissful showers…

Did I mention that I love weddings? I did? Oh well, you’re going to probably hear about it another gazillion times if you hang around this shabby blog for long (please stay…I promise I’ll share the ball).

So here’s the thing: Showers are WAY more grand then when I was a blushing bride (1000 years ago). Back in the day, somebody would call a few girlfriends, light a couple of candles, slap some appetizers on a plate and buy a cake featuring various unmentionable body parts in the most sickly, fleshy colors. Et voila, it’s a party.

These days, we’re talkin’ seriously creative and seriously beautiful. I want a do-over. I can actually hear my mom picking up the phone as I type. My afternoon is going to be spent on the phone calling all my girlfriends, aunts and cousins who hosted my wedding showers and apologizing. “I’m just a stupid kidder…I really loved my showers”.

I just think these umbrella centrepieces are exquisite. Thank you The Knot & The Party Dress for the photo.

Aren’t these just the darlingest cookies? They’re from a new cookbook called Cookie Swap (by Julia M. Usher). I can see putting them in clear plastic boxes and giving to guests as party favors!

At Nicole Jane Home, I carry the best glass drink dispensers EVER!!! I wish I had come up with the idea! I’d drop this blog like a hot cake and skeeedaddle on over to the Cayman Islands for a lifetime of luxurious leisure. Sorry, I’m back from my momentary drift into dreamland…anyhoo…I sell out of these drink dispensers every time I bring them in. Brilliant!

I have proof that I’m not just being biased. Look at these drink dispensers at very cool parties. I think the shape and size of ours is even better, and the ice holder at the bottom means the ice doesn’t dilute the drink and it covers more surface area (phew…I knew that Physics 12 would come in handy).

Lanterns are the bomb (see how hip and jiggy I can get with the teen lingo…the kids love it when I talk like that…NOT). I want to be at the party where they have these adorable lanterns. shades of aqua Easter…

Easter makes me feel like redecorating! Let’s face it…every season makes me feel like redecorating.

This year, I’m really digging the color aqua (I was born in ’64…so it’s authentic when I say “dig it”), so Easter 2010 is “Seaside Chic” at the Findlay estate (bah ha ha ha). This epiphany came to me when I flipped open my crisp, new copy of Canadian House & Home magazine, which I relish with a piping hot cup o’ coffee and my two cuddly dogs.

C & C design editor, Stephanie White, came up with these gorgeous painted jars, and I fell instantly in love. They’re so sweet. She recommends using a florists water tube on the end of flower stems if you want to use them as vases. I’m thinking they’d look pretty sharp with tea lights flickering in them too (not sure if acrylic paint is flammable though).

I wonder if I could build a new dining room, wallpaper it in fabulous paper, and reupholster my dining room chairs by Easter…hmmm. In case I haven’t said it before (about a zillion times), Sarah Richardson is Canadian royalty!!!!! She should have been included in the opening ceremonies for the Olympics!

When I was in Seattle last week, I stopped in at Sur La Table (drooool) by Pike’s Place Market and spotted this lovely piece of epicurean delight–Le Crueset’s Carribean-color French oven. I think it would be perfect for a little Easter weekend lamb stew!!!

This is my celadon-colored Sophie Conran tableware, which I absolutely adore. I’ll probably mix it up a little with some of my aqua & chocolate brown damask placemats–ooh la la. I admit it, I’m a shameless saleswoman! I’m a walking, talking Nicole Jane Home endorsement advertisement! I must be stopped!

late night bites…

It’s late, I’ve been blogging and tweeting…I should be drifting off to dreamland. But no…I just had to click on one more blog link, and now I’m doomed!

It’s not because it’s a lousy blog. On the contrary. I love it. Way too much for late night. You see, we had a late lunch and figured we didn’t need dinner. I’ve been ignoring a few mild stomach grumbles–mind over matter and all that–but then I hit Smitten Kitchen and was SMITTEN with the picture of the Breakfast Pizza and the Baked Rigatoni with Tiny Meatballs! Now I’m as desperate as I was when I was pregnant in the depth of winter and forced Mark to tell me the story about plucking a grapefruit off a tree in New Zealand and sitting on the side of the road eating it. I’d stop him mid-sentence and make him back up and repeat the “juicy” details…seriously!

Sigh…
